What person does not enjoy waffles? They are crispy and soft, and they go well with any topping. It would not be an exaggeration to suggest that they are sacrosanct because they were invented from the dough used to make wafers in the Catholic church.

Seeing this originally Belgian cuisine turn into a typical American meal makes me reflect on how the world is integrating. Consider how difficult it is to have strawberries available throughout the year, particularly in locations where these fruits do not grow.

Having decent waffles on the table requires an entire supply chain; getting it out of the ground and onto the shelves is not as straightforward as it appears. And it’s more complicated now than it used to be.
